- Three cards come face up in the middle. Everyone shares them.
- A fourth card, then a fifth, turn up one at a time.
- Between each card you can fold, call, or raise the chips in the middle.
- Anyone still in shows their cards.
To win: Make the best five-card hand out of your two and the five in the middle. You can use both, one, or neither.

About 4 minutes a hand
How a hand goes
- Everyone gets seven cards.
- Pick three you do not want and pass them to the player on your left.
- Look at the three you were handed, then pass two the same way.
- One more pass, this time a single card.
- Drop two cards and show your best five.
To win: Best five-card hand at the end takes it. What you throw away matters as much as what you keep.
Fast rummy. Build sets and runs, dump your deadwood, and knock before anyone else does.

- On your turn, draw one card and throw one away.
- Lay down sets of the same rank or runs in the same suit.
- Knock when the cards left in your hand add up to five or less.
- Everyone shows. Face cards count ten, aces count one.
To win: Lowest count wins the hand. Knock too early and someone under you takes it instead.

How a hand goes
- Two cards are turned face up with a gap between them.
- Decide how many chips to put in the middle, or pass the turn.
- A third card flips.
- Land it between the two and you take chips out of the middle.
- Miss, and your chips stay in for the next player.
To win: Widest gaps are the safest and the cheapest. The pile keeps growing until somebody hits.
